The fruits of the okra plant are also referred to as pods, and you may hear them referred to as “lady’s fingers”. When you slice open an okra pod, you see sizable seeds, which are edible. You may also notice a slightly gooey substance within the pod. This is the good stuff. It thickens the sauce for stews, chili, and a variety of soups.
Slice off the top and cut across the pod, making small okra rings, and simply add them to the sauce. No need to sauté first; you want to start them raw. The goo not only thickens the sauce but actually adds soluble fiber to the dish.
You can freeze pods whole, or slice them into rings first, and then freeze. Properly sealed, they will last up to a year in the freezer.
Another culinary option is pickling. Combine with other veggies such as carrots and peppers, and you’ll have a lovely condiment for sandwiches, burgers, and hot dogs.
